Knives and sharp blades can be dangerous. We all know that. So long as they are well maintained and used by fully trained staff with the correct PPI then that danger can be kept to a minimum. Where we tend to see problems is when: –
- They are used by poorly trained staff – or even staff who haven’t been trained at all
- The staff are not supervised or monitored leading to ‘corners being cut’
- The machines or knives are not properly looked after, or they are broken
- PPI equipment is either not available or it is damaged
